Saóror savór is a sweet and sour dressing made with vinegar, sugar, pine nuts, onions and raisin. In the past, this dressing was created as a way of storing food on Venetian ships and boats by sailors and fishermen. The word “saór” in the Venetian dialect means flavor. Sardines, small fish and crustaceans are first fried and then marinated in “saór” to be preserved for a longer time.
These “saór” seafood dishes are often served as appetizers and they represent the great italian culinary tradition.
